Happy Birthday to us! We are 2 years old, and to celebrate here are the cupcake and frosting recipes as promised. Enjoy.
Birthday Cupcake Recipe
Ingredients:
1 tablespoon apple cider vinegar
1 1/2 plain soymilk
2 1/8 cups flour
2 tsp. baking powder
½ teaspoon baking soda
½ teaspoon salt
1 1/8 cups sugar
1/2 cup vegetable oil
1 1/2 teaspoon vanilla extract
1/2 teaspoon coconut extract
Directions:
1. Preheat the oven to 350º. Line 24 muffin tins with liners.
2. Stir the apple cider vinegar together with the soymilk (it will curdle - this is supposed to happen).
3. In a large mixing bowl, stir together the flour, sugar, baking powder, baking soda, and salt. In another mixing bowl whisk together the soymilk mixture, canola oil, vanilla, and coconut extract.
4. As always, add the wet to the dry ingredients, then mix until smooth
5. Fill each muffin cup with ¼ cup of batter. Some cups may not be filled. Bake for 15 to 20 minutes.
6. Test readiness by inserting a toothpick into the center of the cupcakes, if it comes out clean, then they're finished.
7. Allow the cupcakes to cool completely before frosting
**BONUS RECIPE**
Easy Vegan Frosting:
Ingredients:
5 Tablespoons Flour
1 cup soy milk
1 cup sugar
1 cup softened margarine
1 tablespoon vanilla
food coloring of choice
Directions:
1. whisk the flour and the milk together in a saucepan until they are thick
2. cool the mixture to room temperature
3. add the other ingredients and mix until smooth
4. add the desired color and amount of food coloring
